Pork fat is ideal for both sausage and burgers, providing excellent flavor and moisture. Beef fat or suet can also be used for burgers but is not recommended for sausage. Suet, while versatile, is better suited for rendering into beef tallow, making soap, or feeding birds. For game burgers, aim for 15% fat content using either beef or pork fat. For sausage, use a 50/50 ratio of pork fat to game meat by weight. For example, 12 pounds of elk would require 6 pounds of pork fat or 50/50 trim.
