Stephen McCabe joined Edwards Meats from Ireland, where he began cutting meat at the age of 14 and trained for five years on the Glen Road in West Belfast. He gained valuable experience working with several large companies in his homeland before making the leap to the U.S. Stephen brings a wealth of knowledge in both European and American cuts, along with expertise in various cultural cuts and seasonings. Edwards Meats was the first place he applied in the U.S., and under Darin’s mentorship, he has expanded his skills by exploring different sausages, seasonings, and variations of cuts. His diverse background and passion for butchery make him an exceptional asset to our team.
